DIWALI
VEGETABLE CURRY
Ingredients
1tbsp Sunflower oil
1 Onion
2 Cloves Garlic
1.5inch fresh Ginger
1 red Chilli
1 tsp Turmeric
1 tsp Garam Masala
4 Carrots
350g Potatoes
150g Frozen peas
1 tbsp Fresh coriander
A beautiful and simple vegetable curry, a great recipe
often cooked during Diwali, the Hinda festival of lights. The Diwali
is predominantly a vegetarian festival and , it is synonymous with
elaborate feasting.
Start by chopping the onion and crushing the garlic.
Heat them with the oil in a frying pan until softened.
Grate the ginger and add to the pan.
Chop the chilli and remove all the seeds. Add the turmeric.
Peel the carrots and dice the Potatoes into chunky pieces, add these
with the garam masala to the pan.
Stir and cook over a gentle heat for 15 minutes.
Then add the peas and cook for a further 10 minutes.
Sprinkle the curry with the fresh coriander to garnish.
