Ingredients
2 teaspoons ground ginger
1 teaspoon ground garlic
5 teaspoon vegetable oil
11/2lb chuck steak
2 onions, quartered
4 cardamon pods
1 bayleaf
3 whole cloves
5 whole peppercorns
stick of cimmamon
1 teaspoon ground coriander
1 teaspoon ground cumin
2 teaspoons paprika powder
1/2 teaspoon cayenne pepper
1/4 pint natural yoghurt
1 pint beef stock
8oz long grain rice
1 teaspoon salt
Method
Put ginger and garlic and 1 tablespoon warm water together
and stand for 5 minutes.
Heat the oil brown the meat on all sides, remove and reserve, add
onions fry for 5minutes, set aside with the meat. Stir in remaining
spices and fry for 1 minute, gradually stir in the yoghurt and stock.
Return meat and onions to the pan together with the garlic mixture
simmer for 2 hours or until meat is tender.
Put rice in to pan with 1 pint water and salt, bring to the boil
cook for 15 minutes or until rice is tender, serve together.
