1/2 teaspoon ground turmeric
11/2 teaspoon salt
1 tablespoon vegetable oil
1/2 teaspoon mustard seeds
1 teaspoon minced garlic
2 teaspoons coconut
2 teaspoons brown sugar
6oz long grain rice
1 tablespoon chopped coriander
Wash lentils well, place in pan with the turmeric salt
and 3 pints of water. Bring to the boil, cover and cook for 1 hour
or until lentils soft. (it may be necessary to add more water during
cooking it should not reduce to less than 2 pints ).
In other pan heat oil, fry mustard seeds, chillies and garlic, add
coconut fry for 2 minutes. Add to lentils, with the sugar and cooked
rice and simmer for 5 mins.
Serve hot sprinkled with the coriander.
