PAKORAS
Ingredients
6oz baisen or ganthia flour
Pinch of baking powder
1/2 (half) teaspoon chilli powder
Pinch of salt
1 tablespoon lemon juice
Oil for deep frying
1 large onion sliced
4oz cauliflower florets
4oz aubergine, sliced in to rounds
4oz green pepper, sliced in to rings
4oz button mushrooms
Method
Sift flour, baking powder, chilli powder and salt.
Make in to a batter with 1/4 pint of water and lemon juice, beat
well.
Heat oil, dip vegetables in to batter a few at a time and fry to
golden brown.
Drain on kitchen paper and keep hot. Serve with tomato sauce or
chutney
