PRAWNS IN COCONUT MILK
1 Pint coconut milk
2 Tablespoons yellow curry paste(see cooks tip below)
1 Tablespoon fish sauce
½ Teaspoon salt
1 Teaspoon sugar
1 lb King prawns, shelled and deveined
8oz cherry tomatoes
Juice of ½ lemon to serve
2 red chillies, cut into strips to serve
Coriander leaves, to garnish
A curry like dish where prawns are cooked in a spicy coconut gravy.
In a pan bring half the coconut milk to the boil, add
the yellow curry paste and stir to it disperses, then simmer for
Add the fish sauce, salt, sugar, and remaining coconut milk, simmer
for 5 minutes.
Add the prawns and tomatoes, simmer very gently for 5 minutes or
until prawns are pink and tender.
Serve sprinkled with lime juice and garnish with chillies and coriander.
